A long-time favorite of customers here at the Cafe, Watermelon Ribs are perhaps most popular in the summer. The slow-cooked ribs are infused with the perfectly balanced sweetness of fresh watermelon chunks to create a dish that’s unbelievably delicious and unique… so much so, that it was one of the featured dishes at the James Beard house (read more about that here). Lucky for you, we like to share!
3 cups watermelon, cut into large cubes
Blend BBQ rub and brown sugar and rub ribs, making sure to cover all the surfaces evenly. Smoke until cooked (approximately 2 hours with low heat). Cut ribs into 3-bone sections and place in a roasting pan. Cover with BBQ sauce and watermelon cubes. Wrap pan tightly with foil and braise in a 300 degree oven for 1.5 – 2 hours until the meat is falling off the bone. Serve warm.
NOTE: This recipe is best used on pork spareribs rather than baby back ribs.
