Sweet Potato Pancakes with Spiced Pecans and Peach Preserve Butter
You’ve never tasted pancakes like this before! Spiced Pecans add a nice texture, and the Peach Preserve Butter is out-of-this-world amazing.
Sweet Potato Pancakes
- Preheat skillet to 375°F.
- Mix pancake mix per package directions.
- Add batter by 1/4 cup onto the hot skillet in batches, sprinkle about a teaspoon of the chopped pecans onto each pancake before you flip it, and cook until golden brown on each side.
- When all pancakes are ready, serve on a plate, sprinkle with any leftover Spiced Pecans and top with Peach Preserve Butter.
Peach Preserve Butter
In a medium bowl, combine all ingredients and mix well with a spatula until smooth. Cover and refrigerate until ready to use.
