Red Eye Gravy

- In a cast iron skillet, over medium-high heat. Cook ham until brown and fat has rendered, 2-3 minutes per side. Transfer ham to a platter.
- Add the coffee and brown sugar to the skillet, scraping skillet with a wooden spoon to deglaze and loosen any browned bits from skillet.
- Bring to a boil and you’re done!
- Serve with your Country Ham. Its a great dip for biscuits!
