Oatmeal Scotchie Ice Cream Sandwiches

  1. Preheat oven to 375° F.
  2. Combine flour, baking soda, salt and cinnamon in small bowl.
  3. Beat butter, granulated sugar, brown sugar, eggs and vanilla extract in large mixer bowl.
  4. Gradually add in flour mixture.
  5. Stir in oats and morsels.
  6. Drop by rounded tablespoon onto un-greased baking sheets.
  7. Bake for 7 to 8 minutes for chewy cookies or 9 to 10 minutes for crisp cookies.
  8. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
  9. Once cookies are cooled, choose two that are similarly sized and lay one upside-down on a plate.
  10. Use a trigger ice cream scoop to add one heaping scoop to the exposed side of the cookie.
  11. Sandwich your second cookie on top, pressing slowly and firmly until ice cream has spread out.
  12. Wrap in plastic wrap and put in freezer for two hours to get firm.
  13. Serve and enjoy!
