Lucky Butter Bites


A soft, chewy, cream cheese and brown sugar cookie rolled in leprechaun sugar! We dare you to try and eat just one! These sweet jem’s were created by our Loveless Cafe Pastry Chef Christa Nash.

Servings: Aproximately 30 Chewy Cookies



  1. Preheat convection oven to 300°F (low fan), (conventional 320°F). Line the bottoms of your sheet pans with parchment paper and set aside.
  2. Sift the flour and baking powder into a bowl, whisk briefly to combine; set aside.
  3. In an electric mixer on medium speed, mix together brown sugar, cream cheese, butter and vanilla until light and fluffy.
  4. Add egg, scraping sides of bowl to ensure everything is completely incorporated.
  5. On low speed, slowly add the sifted ingredients until no streaks remain.
  6. Pour green decorating sugar in a separate wide bowl.
  7. Using a 1 ounce scoop, scoop the dough and form into a ball. Roll ball in the sugar to coat and set on lined cookie sheets. Repeat to use all the dough, and set each about 2 inches apart.
  8. Bake about 12-14 minutes, until cookies are set around the edges and lightly browned on the bottom but slightly soft. Transfer to racks to cool.
