Loveless Pickled Beet and Cucumber Salad

All you need for this recipe is a jar of Loveless Cafe’s pickled beets and a few additional ingredients and you will have a perfect side for your next meal.

Ingredients

• 1 jar Loveless pickled beets (sliced, reserving the liquid to marinate all ingredients)
• 1 large cucumber (sliced)
• 1 medium sized sweet onion, sliced
• 1 1/2 tablespoon fresh dill (chopped, reserve 1/3 of dill to garnish to of salad before serving)
• Salt and pepper to taste

Directions

1. Place all ingredients except the liquid from the pickled beets in a small mixing bowl, lightly toss together.
2. Add the liquid, refrigerate for at least 1 hour or overnight.
3. Garnish with reserved fresh herbs before serving.
