Cast Iron Skillet Chocolate Chip Bacon Brownies

You’ve never had brownies quite like these! Baked in a cast iron skillet, this combination is sure to tempt your tastebuds, pairing the sweetness of chocolate chips with the saltiness of Applewood Smoked Bacon. It’s a rich dessert that you’ll want to share with friends and family. Perfect for any occasion, from game day to Valentine’s day!

  1. Preheat oven to 350°F.
  2. In an 8 - 10 inch cast iron skillet cook bacon until done.
  3. Remove bacon from skillet and place on a plate.
  4. When cool chop into ¼ inch pieces and reserve for later.
  5. Swirl the bacon fat to coat the pan, discard the excess bacon fat.
  6. In a large bowl, whisk together sugar and eggs.
  7. In another bowl, whisk together flour, cocoa and salt.
  8. Add the butter and cream to the skillet bring butter and cream to a simmer over medium heat.
  9. Add 8 ounces of the chocolate; reduce to medium low. Cook, stirring constantly, until chocolate has melted, about 1 minute. Remove from heat. And let cool 5 minutes.
  10. Add chocolate mixture to sugar mixture, whisking until blended (reserve skillet, do not wash!).
  11. Fold in flour mixture.Then fold in 2/3 of the bacon pieces.
  12. Pour batter into skillet. Sprinkle the rest of the bacon on top, along with the 4 ounces of chocolate chips.

NOTE* Bake for about 25 minutes. Check brownie at 20 minutes for a gooier consistency. Oven temperatures vary, and since your cast iron skillet holds heat for quite some time, your brownie will continue to bake if left to rest. For those of you that want a cookie /cake like consistency you may want to let it sit for a bit. Serve from skillet, but be careful; it’s quite warm!
