Bess Truman’s Ozark Pudding

A sweet recipe from 1951….. Bess Truman’s Ozark Pudding was one of President Harry S Truman’s favorite desserts. This is a copy of the recipe as it was sent out to the people who requested it. This recipe comes from the Social Correspondence Office Files of the Truman Papers.

  1. Preheat oven to 350°F.
  2. Beat eggs and sugar a long time until very smooth.
  3. Mix flour, baking powder, salt and stir into the sugar-egg mixture.
  4. Fold in apples, nuts,and vanilla.
  5. Bake in a buttered pie pan in preheated oven for 35 minutes.
  6. Cool to room temperature and serve with whipped cream or ice cream.
