RED VELVET PANCAKE BATTER
2 cups All-Purpose Flour
½ cup Cocoa Powder
1 cup Powdered Sugar
1.5 tsp Baking Powder
½ tsp Salt
½ tsp Baking Soda
1.5 cups Buttermilk
2 ea Eggs
½ cup Granulated Sugar
3 Tbl Red Food Coloring
Sift all dry ingredients except granulated sugar. Mix eggs, buttermilk, granulated sugar and red food coloring and add dry ingredients to wet ingredients in thirds. Do not overmix.
SWEET CREAM CHEESE BUTTER
1 cup Butter, softened (2 sticks)
1 8oz pk Cream Cheese, softened
3 cups Powdered Sugar
1 tsp Pure Vanilla Extract
With an electric mixer, whip butter and cream cheese together for 3-5 minutes until smooth, scraping sides to ensure proper blending. Add vanilla extract and the powdered sugar, one cup at a time until blended.
