We’re just having a ball celebrating National Oatmeal Month this January. To keep the fun going, our baker Alisa made up a special Oatmeal Raisin Pie. Similar to a Pecan Pie in the ingredients and consistency, this recipe has a sweet, hearty flavor that makes it a perfect pie for the winter.
Oatmeal Raisin Pie
| 3 eggs 1 cup light corn syrup 1/2 cup packed brown sugar 3 tablespoons melted butter 3/4 cup quick-cooking oats 1 tablespoon flour 1 teaspoon cinnamon 1/4 teaspoon salt 3/4 cup raisins |
DIRECTIONS:
Heat oven to 325°F. Beat the eggs, corn syrup, sugar, and butter until smooth. Add in the remaining ingredients, and mix well; pour into pie plate lined with your favorite pie crust. Place pie pan on a cookie sheet and bake 50 minutes or until golden brown and center is set.
