½ cup butter
½ cup sugar
½ cup light brown sugar
1 egg
½ teaspoon vanilla
1 cup flour
1 ¼ cup rolled oats
¼ teaspoon salt
½ teaspoon baking powder
½ teaspoon baking soda
½ pound raisins
½ cup finely shredded carrots
Preheat oven to 325 F.
In a bowl with an electric mixer, cream room temperature butter with sugar and brown sugar until light and fluffy. Add egg and incorporate fully. Sift flour, salt, baking powder and baking soda into mixture and combine. Mix in oats, raisins and carrots until fully combined. Place dollups of cookie dough on a parchment-lined sheet and bake for 8-12 minutes until lightly browned.
