Oatmeal Carrot Raisin Cookies- The Loveless Cafe

Here’s a little Loveless insider secret: these cookies are more often than not referred to as “crack cookies” here on property. Yes, they really are that good… and there’s no use in trying to stop at just one.






Oatmeal Carrot Raisin Cookies




½ cup butter

½ cup sugar

½ cup light brown sugar

1 egg

½ teaspoon vanilla

1 cup flour

1 ¼ cup rolled oats

¼ teaspoon salt

½ teaspoon baking powder

½ teaspoon baking soda

½ pound raisins

½ cup finely shredded carrots

Sweet icing (recipe below)


Preheat oven to 325 F. In a bowl with an electric mixer, cream room temperature butter with sugar and brown sugar until light and fluffy. Add egg and incorporate fully. Sift flour, salt, baking powder and baking soda into mixture and combine. Mix in oats, raisins and carrots until fully combined.  Place dollups of cookie dough on a parchment-lined sheet and bake for 8-12 minutes until lightly browned.


Sweet Icing




1 cup confectioner’s sugar

1 1/2 tablespoons softened butter

1 tablespoon boiling water

1/4 teaspoon vanilla


Put confectioner’s sugar to a bowl. Add the butter, water and vanilla and mix until smooth. Drizzle over cooled cookies and enjoy!
