This marmalade is the perfect tart topping to a sweet bread or dessert. Dilute it with a bit of hot water to transform it into a glaze for pastries or creamy custards, or, as some people around here are prone to do, eat it straight out of the jar with a spoon! It never hurts to have a good marmalade recipe in your repertoire since it can be made dozens of ways! This one in particular uses seasonal Meyer Lemons as a part of our Meyer Lemon series from Chef Bart of Loveless Event Catering. Enjoy!
Meyer Lemon Marmalade
2 cups Meyer Lemons, clean, de-seeded and sliced thinly
1 cup sugar
Place lemon slices and sugar in a large pot and cover with cold water. Simmer for 1 hour.
