Meatloaf is one of those all around versatile and interchangeable recipes. It seems like everyone has their own version and the flavors and cooking methods differ as much from one neighbor to the next as one country to the next. All we know is that our recipe is darn right tasty and the Cafe patrons absolutely love it. The trick is in the uncooked rolled oats (a tip from our Pitmaster, George), which provides a different consistency than breadcrumbs and seems to sit well with just about everyone who tries it. See for yourself! Make this recipe at home for the fam, but don’t get your heart set on any leftovers.
Heat skillet over medium heat, add butter and saute onions until they are clear. Combine beef, egg, onion, green pepper, oats and half of the tomatoes and mix well. Season with salt and pepper and shape into a loaf in a glass baking dish. Place the strip of bacon lengthwise on the top of the loaf and bake, covered, at 350 F for 45 minutes. Remove, pour remaining tomatoes over the top, return to oven and bake uncovered for 30-45 minutes until cooked through.
