Deviled ham is absolutely delicious on sandwiches and is something you’ll always want to have on hand for picnic lunches or road trip snacking. If made with our signature Country Ham that’s cured to be outside of refrigeration for up to 90 days, the salty flavor will add quite a kick to the recipe. We like piling it high on hearty and sturdy baguettes then adding a spread of spicy mustard, mayonnaise, Swiss cheese and a handful of arugula for what we deem the perfect sandwich!
Deviled Country Ham
4ea 8oz Packages of Loveless Cafe Country Ham Biscuit Pieces
5 cups water
1/2 cup mayonnaise
1/2 cup Creole mustard
1/4 cup Prepared yellow mustard
1 bunch scallions, chopped
1/2 bunch fresh parsley, chopped
1/2 cup Loveless Cafe Chow Chow Relish
Pinch nutmeg (don’t use too much!)
1 tsp ground black pepper
1 Tbsp hot sauce (optional)
1 Tbsp ground horseradish (optional)
In a medium saucepan, add 5 cups of water and bring to a boil. Once water is boiling, add pieces of country ham a few at a time, cooking quickly for about 2 minutes. Remove and let cool.
In a food processor, chop ham into fine pieces, set aside. Add remaining ingredients to food processor, blend well and add to country ham. Mix well, refrigerate until needed.
Deviled Country ham is great as a spread on sandwiches, crackers and, of course, biscuits.
Note: Don’t throw away the water used to cook the ham – use it to cook up a great bean soup or a pot of rice, potatoes or veggies!
