We're in love with this Creative Bacon Chili recipe submitted by Loveless Cafe fan and fellow bacon lover, Brett!

For web designer, Brett F., the near-obsessive love of bacon is a family affair. Every year for Father’s Day he and his wife and kids prepare meals centered around bacon (a tradition we obviously fully support), and this year was no different. His Creative Bacon Chili concoction had our mouths watering when we came across it as his original recipe entry for our Loveless Bacon Party contest and we knew we had to share it with you all! This hearty meal will satisfy both grumbly bellies and picky palettes and is definitely a recipe you’ll be reaching for again and again.

 

 

 

 

 

“This year [for Father's Day], with the help from Loveless Cafe Bacon, we decided to make our soon to be famous Creative Bacon Chili. So I clothed myself in my Loveless Cafe ‘Life is Better with Bacon’ shirt, cooked up a few extra slices for my daughters to eat as they watched me cook, and filled the house with the wonderful sweet bacon aroma as I prepared a double batch of Creative Bacon Chili.”- Brett F.

 

Creative Bacon Chili

 

Ingredients:

 

At least 1 pound Loveless Cafe Country Smoked Bacon, chopped
1 pound lean ground beef
1 1/2 cups coarsely chopped onion
1 large green pepper, coarsely chopped
1 can (28oz) whole tomatoes un-drained, coarsely chopped
1 can (15oz) pinto beans un-drained (or great northern beans or navy beans)
1 cup picante sauce (I use medium)
1 tablespoon chili powder
2 teaspoons ground cumin
1 teaspoon salt

 

In a large Dutch oven or sauce pan, cook bacon over medium low heat, stirring frequently, until crisp. (Be sure to cook up a few extra slices for any onlookers, or yourself) Remove to paper to drain with a slotted spoon. In left over bacon grease, brown ground beef with onions and peppers, drain excess liquid. Add reserve bacon and remaining ingredients; mix well. Bring to a boil. Reduce heat, cover and simmer on low for 20-25 minutes. Sever over frito chips, topped with cheddar cheese and chipotle hot sauce…. Or just eat as is!
