Chicken N’ Honey Sandwiches

Ingredients:

4 lbs Cooked and Chilled Fried chicken, pulled from the bone

2 Loaves French Bread

Mustard Slaw (recipe below)

1/4 cup Honey

A few dashes of your favorite Hot Sauce

Pull the chicken from the bones, being extra careful to ensure that there are no bones. Chop roughly and set aside. In a small bowl, blend the honey with a few dashes of hot sauce, adding more as needed to suit your preference. Assemble the sandwiches one loaf at a time and then cut into smaller pieces once it is filled. This will help hold the sandwiches together and speed up the process. Slice the loaves of bread lengthwise, leaving one side attached. Open the loaf and spread out a thin layer of the mustard slaw then disperse the chicken evenly. Drizzle with the honey/hot sauce mixture, close the sandwiches and wrap tightly. When ready to serve, cut into portions and secure with a toothpick.

Mustard Slaw

Ingredients:

1 lb Green Cabbage, shredded finely

1/4 cup Yellow Mustard

1/4 cup Apple Cider Vinegar

1/4 cup Olive Oil

2 Tablespoons Granulated Sugar

1 teaspoon Celery Salt

Toss all ingredients together until well combined and set aside until ready to use. If needed, squeeze excess liquid from slaw before making sandwiches.
