Perfect for bringing out the flavors in poultry, beef and, of course, PORK, this blackberry-chipotle glaze and marinade should be kept on hand at all times. No doubt it will take your meal up a notch and give you an undeniable kick that you’ll absolutely love. Use what you need then keep the remainder in a bottle or jar in the fridge for future delicious uses.
Blackberry-Chipotle Glaze and Marinade
1 16 oz jar Loveless Blackberry Preserves
1 cup soy sauce
1/2 cup balsamic vinegar
1 small can chipotle peppers, liquid only (add the peppers to the sauce for the brave only!)
1T minced fresh garlic
1/2 cup finely minced onion
4T canola oil
In a saucepan over medium-high heat, add the oil, onions and garlic and saute until golden. Add the remaining ingredients and stir well. Reduce heat and simmer for 20-30 minutes.
Note: Chipotle peppers come packed in a light tomato broth. This broth often has enough heat to flavor the glaze but feel free to add some chopped chipotle peppers should you desire more spice! This glaze can be used as a marinade and for a sauce/glaze when roasting or grilling pork, chicken or fish.
