Everyone needs a go-to cookie that’s a step away from the traditional (think chocolate chip, peanut butter or plain sugar). Subtle flavors of dried apricots and toasty pine nuts in this buttery cookie make it fancy enough to be the perfect compliment to a glass of ginger champagne but also low key enough to be served any time of day with a glass of milk. Preheat oven to 325 F.

In a bowl with an electric mixer, cream room temperature butter with sugar and brown sugar until light and fluffy. Add egg and vanilla and incorporate fully. Sift flour, salt and baking soda into mixture and combine. Fold in apricots and pinenuts until fully combined. Place dollups of dough on a parchment-lined baking sheet and and bake for 8-12 minutes until very lightly browned.
