Apricot Pine Nut Cookies


Servings: 2 dozen



  1. Preheat oven to 325 F.
  2. In a bowl with an electric mixer, cream room temperature butter with sugar and brown sugar until light and fluffy.
  3. Add egg and vanilla and incorporate fully.
  4. Sift flour, salt and baking soda into mixture and combine.
  5. Fold in apricots and pine nuts until fully combined.
  6. Place dollops of dough on a parchment-lined baking sheet and and bake for 8-12 minutes until very lightly browned.
