Ingredients:

½ pound butter

¾ cup sugar

½ cup light brown sugar

2 eggs

1 ½ teaspoons vanilla

2 cups flour

½ teaspoon baking soda

1 teaspoon salt

1 cup diced dried apricots

¾ cup pine nuts

Preheat oven to 325 F.

In a bowl with an electric mixer, cream room temperature butter with sugar and brown sugar until light and fluffy. Add egg and vanilla and incorporate fully. Sift flour, salt and baking soda into mixture and combine. Fold in apricots and pinenuts until fully combined. Place dollups of dough on a parchment-lined baking sheet and and bake for 8-12 minutes until very lightly browned.
