We’re just having a ball celebrating National Oatmeal Month this January. To keep the fun going, our pastry chef, Alisa Huntsman, made up a special Oatmeal Raisin Pie. Similar to a Pecan Pie in the ingredients and consistency, this recipe has a sweet, hearty flavor that makes it a perfect pie for the winter.
We adapted a flavorful oatmeal cookie recipe from our Dessert Cookbook and instead of adding dried fruit, tossed in a heaping handful of chocolate chips and a heavy dollop of pumpkin puree. The result is a moist cookie that’s not too sweet and provides the perfect balance of fall flavors and crave-worthy morsels of chocolate.
